Creative Travel Continue Their Award Winning Streak


On 29th February 2012, Creative Travel received TWO of the Indian travel industry’s highest honour – the National Tourism Awards as “India’s Best Tour Inbound Operator” in our category. These prestigious awards were presented to Creative Travel by the PRESIDENT OF INDIA.
 
At the prestigious government venue Vigyan Bhawan (which is normally used for heads of state visits and government meetings), in a glittering award ceremony of the Ministry of Tourism, Government of India, Creative Travel was honoured with two National Tourism Awards as “India’s Best Inbound Tour Operator” in our category a category in which we have won consistently since 1978.
 
The award was presented by the Hon. President of India, Mrs.Pratibha Patil, Hon. Minister of Tourism, Mr. Subodh Kant Sahai and Minister of State for Tourism, Mr.Sultan Ahmed were also on stage to present the awards to Creative Travel.
 
The National Tourism Award is a recognition of outstanding achievements of the Indian tourism industry stakeholders. This annual awards function inculcates a spirit of healthy competition in the industry to strive for excellence.
 
The Ministry of Tourism presents the National Tourism Awards to various segments of the travel and tourism industry every year. These awards are presented to state Governments, hotels, heritage hotels, tour operators and individuals of other private organizations in recognition of their performances in their respective fields and also to encourage healthy competition with an aim to promote tourism. The selection of the awardees is made by a high powered Committee consisting of senior officials of the Ministry of Tourism and the travel trade representatives.

From Opera House to Great Barrier Reef Brahimi Cooking up a Whitsunday Feast

Held at Hamilton Island’s luxury resort, qualia, (www.qualia.com.au) the weekend will showcase the best Whitsundays and Australian haute cuisine with gourmands being treated to a once in a lifetime up close and personal weekend with leading culinary and wine experts.

The weekend includes:

  • Friday night welcome dinner: qualia‘s new executive chef, Alastair Waddell (read more), will present an opening night welcome dinner with wines paired and discussed by celebrated wine expert James Halliday.
  • Saturday, master classes: two in-depth master classes will be offered with the guest chef leading up to Brahimi’s showpiece degustation dinner.

Brahimi’s culinary prowess stems from his Parisian homeland where he worked at three-star Michelin restaurants, La Tour d'Argent and at Joel Robuchon’s Jamin, before emigrating to Australia. In late 2001, Brahimi took over the flagship restaurant at the Sydney Opera House, Bennelong, naming it Guillaume at Bennelong and meteoric accolades have followed. He also owns Bistro Guillaume at Southbank’s Crown Entertainment Complex in Melbourne.

Honoured to launch this year’s Great Barrier Feast series, Brahimi said, “It is a real privilege to be able to celebrate the best of Australian cuisine in such a stunning location and swap my kitchen view of the Sydney Harbour for the Whitsundays Coral Sea. I’m also excited to work closely with Alastair since he was my Chef de Partie five years ago at my Melbourne restaurant Bistro Guillaume.”

Biographies:
Guillaume Brahimi, Guillaume at Bennelong, Sydney, www.guillaumeatbennelong.com.au - Guillaume Brahimi was born in Paris, France on 11 August, 1967 and became an Australian citizen in 1994. Guillaume’s passion for cooking began at an early age. Following a two year apprenticeship at Aux Charpentiers, he accepted a position as Commis at the three-star Michelin restaurant, La Tour d'Argent, progressing during his three and a half years to Chef de Partie. During his four years with Robuchon, he progressed from Chef de Partie to Sous Chef and was ready to accept his next challenge – a move to the other side of the world, Australia.

After investigating the restaurant market in Australia, Guillaume opened a small restaurant in Sydney called Pond. Within only six months of opening, Pond earned a record breaking Two Chef Hats and a 16/20 rating. After his meteoric success with Pond, he was approached by the owner of the prestigious Sydney restaurant, Bilsons at Circular Quay. He enthusiastically accepted this challenge and after two years was awarded Three Chef Hats, Best French Restaurant and an increased rating of 18/20. During this time he was also a finalist for two years in "Gourmet Traveller Magazine, Restaurant of the Year".

In late 2001, he was awarded the prestigious and much sought after contract to take over the flagship restaurant at the Sydney Opera House, Bennelong. Guillaume worked with leading Australian architect, Dale Jones-Evans to refurbish this spectacular venue and opened the restaurant in November 2001 as Guillaume at Bennelong. By early 2002, the restaurant was named by Conde Nast Traveller as one of the top 50 new restaurants in the world.

Guillaume is also committed to various charities operating in Sydney. He is an active board member of The Sydney Cancer Centre Foundation and the Bestest Foundation. He has also hosted many charity events at his Restaurant, including the Sydney Children’s Hospital’s Silver Party for three consecutive years, and a fundraising event supporting Breast Cancer Research.

Alastair Waddell, qualia, Hamilton Island, http://www.qualia.com.au - Alastair Waddell has been appointed executive chef at qualia. He previously held the position of sous chef for nearly three years under the tutelage of qualia’s former executive chef, Jane-Therese Mulry. Prior to qualia, Waddell was chef de partie at the 2 hatted Bistro Guillaume in Melbourne. Preceding his move to Australia, Waddell worked in his home town in Glasgow, Scotland with renowned chef, Paul Tamburrini. He held the position of sous chef at The Bistro, at One Devonshire Gardens hotel and the Georgian room in Cameron House, Loch Lomond. Both hotels were awarded the prestigious 3 AA Rosette rating.

He’s passionate about the ‘nature cuisine’ movement led by Noma restaurant in Denmark and believes in giving the greatest respect to nature in his cooking, always using local produce when possible and recognising the importance of flavour, texture and presentation. At qualia, Waddell’s cuisine is inspired by the resort’s stunning island vistas, creating menus that are light, fresh and healthy. However, as a proud Scotsman, he has introduced black pudding to the menu which is now one of the resort’s most popular main courses.

James Halliday, Wine critic and author, www.winecompanion.com.au - James’ career started in law, before moving into winemaking, writing and judging in the 1970s. Since establishing the wineries of Brokenwood and Coldstream Hills, Halliday has written over 60 books and been a significant contributor to others, including Oxford Companion to Wine and Hugh Johnson Pocket Guide. Many of his books have been translated into other languages, such as French, German and Japanese. He continues to write, judge and consult and has a weekly wine column for the Weekend Australian newspaper. He is often described as ‘Australia’s leading wine writer’.

Simon Thomsen, Restaurant critic, www.simonthomsen.com - Simon is the restaurant critic for The Daily Telegraph in Sydney. His reviews appear in the taste.com.au food and wine section every Tuesday. He has written award-winning stories about food and travel for numerous publications, including The Weekend Australian Magazine. He’s worked as a restaurant critic for 15 years and spent the last six years as editor of The Sydney Morning Herald Good Food Guide. Simon hosts a weekly talkback slot about food on Sydney’s ABC 702 with Deb Cameron every Thursday at 10.45am. He has appeared on Masterchef, was a judge on Iron Chef Australia and featured in two SBS documentaries, High Steaks and Heat in the Kitchen.

Alain Passard, 3-Michelin Star chef at Arpège, Paris, Cooks at The Sukhothai Bangkok

Alain Passard is the proud owner of 3 Michelin Stars and his restaurant Arpège located in Paris, France, continues to conduct new innovations in French cuisine that never fail to impress diners who are fortunate to experience any of his creations.

Born in France into a family of musicians, Alain’s interest in cooking started at an early age while assisting his grandmother in the kitchen. He began his professional culinary career at the age of 14 working at Hôtellerie du Lion d’Or in Liffré under Michel Kéréver and his career has escalated ever since, eventually earning him the distinction of being the youngest chef to obtain 2 Michelin Stars, at the age of 26.


In 1986, Alain purchased the 3 Michelin Stars restaurant Archestrate from his former mentor, Alain Senderens, and renamed it Arpège. It took only a single year to earn its first star, then one
year more to earn its second. In 1996, Arpège earned its third star from the Michelin Guide, which it has retained ever since.


Alain’s cuisine resonates something so distinctive in itself, as his inspiration focuses on expressing the idea of mere land and sea by removing red meat from his menu completely and utilizing produce as one of the cores of his art. The Arpège is “home cooking” by Alain, a workshop where raw materials are vegetables, fish, poultry, herbs and spices. He captures the essence of each ingredient through eliminating unnecessary steps, to highlight the character of
the products and harmonize their individual qualities into one dish. His dedication and success in opening new doors, as expressed in each of his creations, provides a memorable experience for
everyone.

Holi: Festival of Colours, India


We like to shout about the wonderful things that happen all over the world so that you know just where to be and when to experience them!

Coming up soon is Holi, the Festival of Colour, on March 8th. Celebrated primarily in India, Nepal and Pakistan, this is the first Hindu festival of the year and is something really special to look forward to. 



This two day festival is an array of colour, with people throwing coloured powder and water on each other, and celebrating the beginning of the spring, when colour starts to burst again after the winter season. 

We can't think of a better time to visit India, when the atmosphere is exitable and your surroundings are an erruption of colour.

April is the perfect month to check in to the Fantasea Reefworld pontoon in the heart of the Great Barrier Reef, which by night transforms itself into a private floating hotel. MAY – As Olympians prepare for London 2012, this month offers the ideal warm up with the Hilly Half Marathon challenge, which takes place on Sunday 6th May. A rugged 21-kilometre route uphill and down dale, the Westpac Hilly Half Marathon follows road, fire trails and walking tracks through Hamilton Island’s undulating interior. 

JUNE - The island plays host to the annual Hamilton Island Cup from 14th – 18th June, Australia’s largest outrigger event and one of the world’s largest canoe regattas. Last year over 1000 paddlers took part from all over Australia plus international teams from Hong Kong, Singapore, Papua New Guinea, New Zealand and Canada. The Cup features more than 100 sprint and medium-distance races. The main event is the 42-kilometre marathon Hamilton Cup, an impressive sight for spectators as the canoes circle Hamilton Island and race through the Whitsundays. 

JULY – Foodies should flock to Hamilton Island to enjoy the ultimate food and wine event, set against the stunning backdrop of the Whitsundays. The Great Barrier Feast kicks off with guest chef, Guillaume Brahimi, (6th – 8th July) from the much-applauded Sydney Opera House flagship restaurant, Bennelong.

This month, Hamilton Island also plays host to a special photography workshop with two of Australia’s best known photographers, David Oliver and Peter Eastway. AWAY in the Whitsundays photography course runs from 29th July – 3rd August, offering the opportunity for hands on expert tuition in one of the most beautiful locations in the world. 

Fast paced action at Audi Hamilton Island Race WeekAUGUST – This is the month that Hamilton Island hosts Australia’s largest and most prestigious off-shore yachting event - Audi Hamilton Island Race Week 17th – 25th August. From serious offshore racing and fabulous super-yachts to onshore glitz, glamour and gourmet fare, Audi Hamilton Island Race Week offers guests the opportunity to experience the best the Whitsundays has to offer. 

This is also an ideal time for family travel - Australia’s winter is mild and comfortable for younger members of the family. Excursions to the Great Barrier Reef, snorkelling safaris and a trip to see the island’s koalas, kangaroos and wombats at ‘Wild Life Hamilton Island’ make holidays for children both educational and fun. Accommodation and meals in selected restaurants are free for children up to the age of 15, whilst the Clownfish Club offers activities for children up to 14 years. 

SEPTEMBER - is whale watching season when visitors can see baby humpbacks that have been born in the warm waters of the Whitsundays, travelling past the coast in pod sizes of between eight and ten whales. Whales, which can vary in length from five to 18 metres, can also been seen in their migrating season (June to September) from Hamilton Island itself.

OCTOBER – Since Captain Cook charted Australia’s coastline in the 1700’s, the Whitsunday Islands have been recognised as one of the best sailing playgrounds in the world. Sunsail’s Sailing Academy on Hamilton Island offers a wide range of accredited marine qualifications for yachts, catamarans and motorboats, with tuition for beginners and experienced sailors alike. After offshore action, wind down at the iconic Hamilton Island Yacht Club. 

Pas de Deux in ParadiseNOVEMBER – The Australian Ballet returns for the fifth consecutive year to give an intimate outdoor performance at Hamilton Island’s luxury resort, qualia. Pas de Deux in Paradise will be staged from 16th – 18th November.

Also this month, the Fujifilm Triathlon (10th November) and Fujifilm Whitehaven Beach Ocean Swim and Junior Triathlon (11th November) take in some of the Whitsunday’s most iconic locations for a sporting epic.

Hamilton Island Golf ClubDECEMBER – Time for a round of golf on Australia’s only 18-hole championship golf course situated on its own island. The 6,120 metre, par 71, course is located on Dent Island, a five minute boat ride from Hamilton Island. Created by five-time British Open champion Peter Thomson, the course is gaining a reputation as one of the world’s top courses not least because of the stunning Whitsunday views from each hole.

The crowning glory of the course is the Chris Beckingham-designed clubhouse, ideally perched to take in the fantastic views of Passage Peak and the Coral Sea. The clubhouse offers an idyllic spot for non-golfing partners to relax over a laid-back lunch or for golfers to take stock of the day’s game over a cold beer.

Gaetano Trovato Returns to The Sukhothai



Two-Michelin Star Gaetano Trovato, chef and owner of Arnolfo Ristorante in Siena since 1982, returns to The Sukhothai Bangkok to present masterpieces from his family’s famous Tuscan cuisine inspired by the azure waves of the Mediterranean. On this visit, Chef Gaetano will be accompanied by his brother, Giovanni, who will complement each course perfectly with excellently selected wines.


Born in Tuscany, Chef Gaetano began his career as an apprentice in Saint-Moritz and moved on to work with Angelo Paracucchi in Ameglia, Roger Vergé at Le Moulin de Mougins and Gaston Lenôtre in Paris, always sharpening his appreciation for different flavours and techniques.  

Early in his youth, Chef Gaetano developed a love for fine cuisine by utilizing a blend of different and contrasting tastes: sweet, savoury, bitter and sour. His careful selection of the best seasonal produce is noted for a genuine and unique quality that allows him to use their true tastes to constant reinvent traditional Tuscan cuisine by welcoming changes and new techniques reflective of the brilliant perspectives that today’s culinary maestros can bring to the scene. 


The two brothers, Gaetano and Giovanni Trovato, and his chef team will be stationed at La Scala, The Sukhothai Bangkok, during 6-10 March 2012—for 5 days only!
